The award-winning chef opens one of the most sustainable restaurants in Ibiza

As Ibiza's gastronomic scene evolves into a global food destination, international visitors head to its surmountable restaurants in search of a memorable moment. At the forefront of change is a new face on the island, Pepita Ibiza. With their latest concept, the co-creators Paola De Gregorio and Dave Bone are breaking new ground and presenting "The Art Of Dining", which combines food, art and music that are jointly supported by sustainability.

As a multi-award winning chef, Dave Bone is well known for his culinary creations. With over 20 years of experience in the London restaurant scene, pepita's Dave Bone has worked with industry leaders Tom Aikens, Mark Hix, Tim Hughs, Chris Corbin and Jeremy King.

In 2020, Dave received a Michelin Bib Gourmand Award and was named a Netflix Million Pound Menu winner in 2018, which further sparked his career. Dave Dishes has often received rave reviews from a cross section of the most influential publications, including The Guardian, Sunday Times, and The Caterer.

Firmly focused on the island's local and organic produce, Dave is now opening his third restaurant and the crown jewel "Pepita" is in the heart of Santa Eulalia. Unlike many other restaurants, they will pride themselves on being fully organic and making fine dining available to all (both in terms of price and inclusiveness).

In keeping with the island's ethos, Pepita brings social dining to the forefront of the restaurant's dining experience.

Expect progressive seasonal menus with the best produce the island has to offer. With special techniques such as open fire, dehydration, powder, pickles, purees, canned food and more, Pepita makes an impression on the island. Every month the team will feature different local artists and musicians to keep it lively and relaxed. The venue envisions a vision to both showcase and share the island's own talent while providing a platform for creators to be actively seen and heard.

Pepita Ibiza is open from October 14th and runs every Wednesday through Saturday from 8:00 p.m. to 12:00 p.m., with a special Sunday munch menu also planned. From November, the opening times should start at 7 p.m. Pepita invites locals and tourists alike to become part of their future success.
